If there's one thing Toronto doesn't need, it's another Trattoria. But that didn't stop Ink Entertainment's Charles Khabouth, and his partner Toufik Sarwa from opening Briscola, the nightlife duo's first real foray into fine dining. So how do they do? Chef Sean Reeve's menu hits all the right notes, with whimsical takes on classics--fried olives, tuna carpaccio, and deep-fried artichokes--and modern upgrades on mains like eggplant parmigiana, and spaghetti pomodoro. They could have also served raw beets and iceberg lettuce, and Toronto's gliterati would still line up in droves, just to be seen under the custom wire-framed chandeliers that light the house that Khabouth built.
