Fabrice Le Bourdat, the former pastry chef at several palaces including le Bristol, is very much at home in the working class neighborhood around the Marché d'Aligre. The bread here is certainly nothing to sneeze at, but the real draw at the Blé Sucré is dessert. Le Bourdat is down in the basement before 3am assembling out the city's best millefeuille, not to mention a delicious mont-blanc and the almost too-pretty-to-eat tarte tatin. Hit the ice cream case during summer for a cone of salted butter caramel joy, and don't forget to take a sashet of glazed madeleines for the road.
